Cooling Guacamole with Tomatillos + Red Grapes 

Ingredients 

2 ripe avocados 
2  tomatillos, chopped
handful of halved cherry tomatoes
1 red onion 
zest + juice of 1 lime
2 cloves minced garlic
1 bunch of halved red grapes
1 hot pepper, minced
bunch of chopped fresh cilantro

Method

Thoroughly combine all ingredients, leaving some cilantro aside as a garnish. For a quick and easy meal, place guacamole on top of black beans, simmered with cumin and garlic, and brown rice. Enjoy!

 

The nights are getting cooler, so what not use the abundance of local veggies to make a summer harvest stew? Tip: try blending chickpeas and cashews with water for a rich + creamy (yet delightfully light) base.
